Nah, you can't change it directly in the game unless it's through Facebook. Link your FB and whatever your profile pic there is, it becomes your Subway Surfers profile pic too. So make sure that FB pic is snazzy!

Actually, changing your profile picture directly in Subway Surfers isn't a feature. Your best bet is to link your Facebook account to the game. Your Facebook profile picture automatically syncs up as your game profile picture. Worked for me!
