You can't actually give yourself a knife directly through the console in regular CS:GO gameplay because of cheat protection. However, if you're on a private server or offline game where cheats are enabled, you can type 'sv_cheats 1' into the console first. Then, use 'give weapon_knife' followed by; however, this often defaults to giving you your current knife skin. To play around with different knives, you'd need to use specific knife model commands like 'give weapon_knifegg' for a golden knife, for example. Remember, these tricks won't work on official servers!

Honestly, just buy the skins or trade for them. Messing with console for knives feels like a hacky way to enjoy skins that won't even stick around.

Been there, done that. Tried all sorts of console commands to show off in front of my friends during our LAN party. Can confirm, 'give weapon_knife' followed by enabling cheats with 'sv_cheats 1' does the trick, but only on a server you control. Still, nothing beats the thrill of unboxing a real deal in-game.
