Just give 'em a good whack with the action button when they're all grown up. No fancy tools needed.

Remember, patience is key! Potatoes take 6 days to grow. Don't go smashing your action button too early, or you'll just be hitting the dirt. Wait till you see those lovely green tops, then it's harvest time!
