Sadly, you can't really have 'infinite time' in a standard online match of CS:GO. The game's built with competitive balance in mind, so timers are a crucial part of gameplay. BUT, if you're just looking to mess around or practice, you can set up a private match with custom settings. Just open up your console (enable it first in game settings) and use the command 'mp_roundtime_defuse 60' for bomb defusal maps (this sets the round time to 60 minutes, not quite infinite but should be enough for whatever you're planning). Don't forget 'mp_restartgame 1' to apply the changes!
