Pausing a replay in CS:GO is pretty straightforward. While watching the replay, all you need to do is press the 'Shift' + 'F2' keys together. This will bring up the demo playback controls, where you can hit the pause button. If you love keyboard shortcuts as much as I do, just hit 'pause' on your keyboard for an instant freeze-frame!

Actually, I find using the console command 'demo_pause' is a more reliable method for pausing replays. Open the console with '`' (tilde key) and type in 'demo_pause' without quotes. Works every time and you feel like a pro hacker.
