Picking up a knife in CS:GO isn't something you can do with a direct command like you would buy a weapon. If you want a new knife, you gotta pick it up off the ground during a game, which happens when you walk over it if you don't already have a knife in your inventory. Unfortunately, there's no magical 'give knife' console command for in-game use. You're stuck with your default knife unless you loot one another player dropped.

Lol, nice try! But no, you can't just command grab a knife out of thin air in CS:GO. You keep what you spawn with or pick up another player's drop by walking over it, but that's it.

Actually, if you're looking to switch knives in a match, you're out of luck. CS:GO doesn't let you pick up or switch knives through commands during regular gameplay. Knives are considered personal items, tied to your account. You'd have to change skins outside of a match through your inventory.
