To remove a sticker from a CS:GO skin, right-click on the weapon in your inventory that has the sticker you want to get rid of. Select the 'Scrape Sticker' option. You can then choose which sticker to scrape. Remember, scraping a sticker is permanent. After a few scrapes, the sticker will be completely removed. So, make sure you really want to say bye to that sticker before you start!

Honestly, sometimes it feels like a crime removing a perfectly good sticker from a skin. But if you must, just scrape it off. I've done it a few times when I got tired of the look. Just a heads up, it can take a few scrapes to fully remove.
