If all else fails, deleting the CS:GO config file in your user folder forces the game to create a new one with default settings. But try the launcher options trick first; it's less drastic.

Resetting your CS:GO resolution is a piece of cake! Just right-click on CS:GO in your Steam Library, go to 'Properties,' then 'Set Launch Options...' and type in '-autoconfig'. This forces the game to reset to default settings next time you launch it. Remember to remove '-autoconfig' after the reset to avoid resetting every time you start the game.
