Saving CS:GO demos is super easy! First, make sure you enable the console from the game settings. Then, during a game, open the console and type 'record [demo name]' to start recording. When you're done, type 'stop' in the console to save it. You can find your demos in the 'csgo' folder within the game's directory, usually under 'Steam\steamapps\common\Counter-Strike Global Offensive\csgo'. Just replace '[demo name]' with whatever you want to name your demo.

Honestly, why bother saving demos when you can just stream or use third-party software that does it for you? Much easier than fiddling with console commands, IMO.
