Just use the console to set your viewmodel, then write "host_writeconfig". It saves all your current settings, including your viewmodel, to the config.cfg file. Easiest way without creating extra files.

Honestly, the whole setting up files thing is overrated. I just adjust my viewmodel when I start the game. Takes like two seconds.
