Just hit `~` and type 'mp_roundtime 60' for an hour-long round, if you're into that sort of extreme gameplay. Obviously, that's not practical for most, but hey, you do you.

Setting round time in CS:GO is pretty straightforward if you're in control of the server or playing offline. Just open the console (enable it first from the game settings if you haven't) by pressing the tilde (~) key. Then, type 'mp_roundtime_defuse X' or 'mp_roundtime_hostage X' where X is the time in minutes you want to set for Bomb Defusal and Hostage Rescue scenarios, respectively. Remember, you can't change these settings in official matchmaking, only in private servers or practice games.

Honestly, why mess with the round time? The default settings are there for a reason. Just play the game as it's meant to be played.
