Easy peasy! Just hit the B button on your Nintendo Switch when your Pokémon starts evolving. This interrupts the evolution process and keeps your Pokémon in its current form. I do this all the time when I want to keep my Pokémon cute and small a bit longer or when I'm waiting for them to learn a specific move before evolving.
