Throwing a Pokeball in Pokemon Violet is super easy! Just face the wild Pokemon you want to catch, press the 'X' button to open your bag, select the Pokeball you wanna use, and then press 'A' to throw it. Make sure you aim well and maybe weaken the Pokemon a bit first to up your chances!

Honestly, I just spam 'A' after selecting my Pokeball and it works most of the time. Not the most strategic, but hey, if it ain't broke...
