Just beat the game lol. After you finish all main quests, the epilogue starts automatically.

Honestly, getting to the epilogue is a bit of a grind, but totally worth it. Make sure you've beaten all the gyms, Team Star, and the Titan Pokémon. Then, boom, welcome to the epilogue. It’s a nice wrap-up with a couple of surprises.
