Yes, you absolutely can plant fruit trees in winter in Stardew Valley! Unlike seasonal crops, fruit trees can be planted any time of the year. It's a great strategy since they'll be all ready to bloom and produce fruit when their specific season rolls around. Just make sure to clear out two tiles in every direction around the tree so it can grow.

I've planted fruit trees in the dead of winter and had no problems. It's like they don't even notice the snow.
