Nope, you can't customize your character after creation, but hey, at least helmets hide bad haircuts. ;)

You can't change your character's appearance once you've started a game, but you can create multiple characters with different looks from the main menu!

I've tried everything; once your Viking is set, that's it. Just create a new one if you wanna switch things up.
