Nope, you can't play Valheim in first person out of the box, but that's what mods are for! Just be ready for a different gameplay experience.

While Valheim is designed as a third-person game, you can use mods to switch to a first-person perspective. I recommend checking out the First Person View mod on Nexus Mods!
