As someone who's spent hours on MKXL, there's no setting to disable Fatalities, but you can just ignore the prompts to perform them.

No option to turn off Fatalities, but hey, just don't do 'em if you don't like 'em!

You can't turn off Fatalities in Mortal Kombat XL entirely, but you can avoid them by not performing the inputs at the end of a match.
