Nope, you can't turn off the gore in Apex Legends. The game's got its share of violence and blood, but honestly, it's pretty tame compared to some other shooters out there. You won't find any options in the settings to tone it down, though.

Actually, the 'gore' in Apex Legends isn't as intense as you might think. No dismemberment or anything overly graphic, just some blood splatter. So while you can't turn it off, it's not super graphic.
