Nope, One Piece didn't take a 2-year break. What you're probably thinking of is the in-story time skip. The characters themselves took a 2-year break to train and get stronger, but the manga and anime kept sailing without interruption.

No break for One Piece! The manga and anime continued on their merry way even as the Straw Hats were powering up during their 2-year training hiatus in the story. Continuous adventure since '97!

Actually, One Piece never paused for 2 years. The crew's 2-year training period was just part of the storyline. The weekly manga and episodes kept coming out, feeding us our much-needed dose of adventure without a hitch.
