120 levels! And when you hit the bottom, you get a special key that unlocks the Skull Cavern in the desert. That place? No bottom. Happy mining!
Just to add a twist, technically, the Skull Cavern is endless. So if you're asking about the deepest you can go in ANY mine in Stardew, the sky's (or the ground's?) the limit!
