How do ghouls die in Tokyo Ghoul?
For a ghoul to bite the dust, you've gotta hit them hard in their kakuhou, the source of their kagune. A quinque weapon like the ones used by CCG will help too.

In my experience watching the show, the ghouls need to get hit right in their core with a quinque or have their kagune severely damaged. It's basically like fighting a really tough boss in a video game!
Ghouls in Tokyo Ghoul can die if their kagune (the predatory organ) is destroyed. Also, repeated damage to their regenerative organs can do the trick!
Getting whacked enough times will do the trick. It's all about wearing them down.
