Holding LT is all you need to do! Just make sure you don't tap it unless you want the alternate aiming mode.

Just hold down the left trigger (LT). If you tap it, you'll switch between shoulder view and ADS. Happy hunting!

As someone who's logged plenty of time in PUBG on Xbox, I can confirm: just hold down LT to ADS. Tapping it changes to third-person aiming.
