Honestly, just keep whacking him with whatever is available until he finally gives up.
From experience, staying agile is important! Rolling to avoid his charge and being quick to fire back with the explosive eggs he gobbles down is how I finally beat him!
Just keep moving and use the items that the birds drop for you! Hit him with the bombs when you get the chance, and keep dodging his incoming attacks!
