To use Easy Fatalities in Mortal Kombat 11, just hit the pause button during a fight, then go to Move List > Finishers. You'll find the Easy Fatality inputs there! Make sure you have Easy Fatality Tokens.

Nah, just learn the full Fatality moves. It's more satisfying, trust me. Tokens are for wimps.

Just press the right bumper (RB/R1) and the required face button (X, Triangle, etc.) at the right distance. You'll need Easy Fatality Tokens though, which you can buy in the in-game store.
