Smelting gold in Stardew Valley is pretty chill - only takes about 5 in-game hours. So, you can drop your gold ore (and don't forget the coal!) in the furnace, go catch some fish or sweet talk Haley, and bam, your gold bar will be waiting.

Actually, it's not that long. 5 hours in-game. But here's a tip: get multiple furnaces going and you can process lots of gold at once. Efficiency is key!
