Sam's height isn't officially stated, but if you look at how he stands next to a character like Alex, who we can guess is pretty tall, Sam's probably not the tallest guy around. I'd say he's got that skater boy height vibe, so somewhere between 5'7" and 5'10"?

Who's measuring, really? Sam's got that cool laid-back vibe that makes him stand out more than his height does in Stardew Valley.

Sam from Stardew Valley doesn't have an official height listed by the creators. But, judging by his in-game sprite next to others, he seems to be about average height compared to the rest of Pelican Town's residents. If you're trying to match him up for a cosplay or something, aim for around 5'8" to 5'11", which seems reasonable given the pixel art style.
