You can appear offline in Fortnite by setting your Epic Games account status to 'Invisible.' Just open the Epic Games launcher, click on your profile, and select 'Invisible' from the dropdown menu.

I've done this a bunch of times. Go to the Epic Games launcher, click on your profile icon, and set your status to 'Invisible'. Then, nobody will see you online in Fortnite!
