Open your franchise or Diamond Dynasty mode, head to your team management screen, and then select the player you want to make captain. Easy peasy!

From personal experience, make sure you're in the right mode (Franchise or Diamond Dynasty), then navigate to your team roster, choose your captain wisely, and confirm your choice.

Just click through the menus until you find team management. It’s in there somewhere.

You just have to go to the team management screen, choose the player, and assign them the role. Done and done!
