Actually, there's a mod for that on PC! LSPDFR lets you play as a cop in GTA V. Super detailed and you get to do everything from pulling over suspects to responding to 911 calls. It's not official by Rockstar but hey, if you're on PC, why not live the cop dream?
Nah, you can't be a cop in GTA Online like it’s a career choice. Best you can do is dress up like one and play pretend. Just drive around in a stolen cop car. Close enough, right?
