Breaking up in Stardew Valley is actually pretty straightforward if you're in a relationship with one of the marriage candidates. Just give them the Wilted Bouquet or Mermaid's Pendant depending on the stage of your relationship. These items serve as the signal for a breakup. Remember, it's all part of the game, so don't feel too bad!

Actually, just ignore them. If you don't interact with your significant other for a long enough time, the affection levels will drop. It's a slow burn kinda breakup.
