First things first: unlock the Stonecutter by finding iron. Once you got that, collect a lot of stones and start sketching out your layout. Add some iron beams and wood for structural integrity. Build high walls and embellish with cool details like banners and braziers! Happy building!

Honestly, just gather a bunch of stone and get to work. Build walls, add some towers, done. It's Valheim, not an architecture class.
