Canceling a mission in GTA 5 is pretty straightforward. If you're in the middle of a mission and decide you're not in the mood, simply go to the game menu by pressing ESC on PC, the Start button on Xbox, or the Options button on PlayStation. Look for the option labeled 'Quit Mission' and select it. Voila, mission aborted! Just remember, you'll have to restart the mission from the beginning if you want to tackle it again later.

From firsthand experience, some missions don't give you the quit option directly in the menu. For those, try getting your character wasted or busted. Instant mission cancel, though a bit dramatic LOL.
