Open the Xbox app on your phone, go to your profile, tap on 'Subscriptions,' and cancel Xbox Game Pass Ultimate from there.

From my experience, the easiest way is using the Microsoft account website on your phone. Navigate to 'Services & Subscriptions,' find Game Pass Ultimate, and cancel it!
