Upgrade your characters with better backpacking skills and pick up the 'Resourcefulness' skill. More skill means more stuff!
Roll with a buddy! Have another survivor tag along with you. They carry stuff too, and you can swap items if you get overloaded.
Throw some items in the trunk! Vehicles in the game have storage space; use those trunks to stash extra loot.
You don't really need to carry more stuff. Just be efficient with what you grab and prioritize essential items.
