Go to one of the hubs, like Soul Society, and look for a NPC named Mask Master. He lets you switch masks for a small fee in Soul Points.
In my experience, the best way is to earn enough Soul Points and visit the shop. They have new mask designs you can buy and equip.
You gotta head over to the customization section in the main menu, and there should be an option to change your mask. Easy peasy!
Honestly, I've played for hours, and there's no way to change the Arrancar mask. Just rock the one you got!
