Go to the Superstar Edit mode, then choose 'Appearance' and 'Hair & Facial Parts'. Pick your new hairstyle and you're set!

From experience: Go into the create mode, select 'edit superstar', and under 'hair' you'll find a bunch of styles to choose from. Easy peasy!
