To change your Lotus appearance, go to your Personal Quarters on your Orbiter, approach the helmet stationary in the room, and interact with it. You can then customize different looks for the Lotus or even switch back to a previous appearance if you like.

Talk with The Man in the Wall in your Personal Quarters. You'll see options to change the Lotus there. Simple as that!

Changing the Lotus comes after completing certain quests like the Apostasy Prologue. Once you've done that, head to your Personal Quarters and interact with the helmet display to customize the Lotus.

Just finished the Sacrifice Quest? Head to your Personal Quarters on the Orbiter, interact with the helmet relic, and select your preferred Lotus appearance from there. Easy peasy!
