On Xbox One, just go to the main lobby, click on the game mode option, and select your preferred map. Easy peasy!

Honestly, you can't always pick your map in PUBG. It's more about rotating through the available maps.

I've been playing PUBG on Xbox One for a while, and to change maps, you have to go to the game mode section in the lobby, then pick the map from the list before starting your match.
