How to change name in Undertale
Go to Undertale's save files on your computer. Delete or rename the 'file0' and ‘undertale.ini’ files, then restart the game. Voila, new name time!

From experience, just start a new save -- it's simpler and it avoids file tampering! Trust me, it's worth it for a clean slate.
You can't change your name in-game once you've set it, but you can reset your Undertale save data to start fresh with a new name!
