Head over to the Microsoft account website, sign in, and navigate to 'Your Info'. Select 'Contact Info' and hit 'Edit' next to your phone number. Replace the old number with the new one, then save!

You gotta go to Microsoft's site, sign in, and update it in the 'Security Info' section. Trust me, I just did it last week, and it's straightforward.
