From personal experience, just head into your profile settings and edit your display name. Takes like two minutes tops.
Hit up the Skype app, tap your profile pic, then 'Skype Profile,' and change your name. Boom, you're done!
Pro tip: Your Skype username (the one you sign in with) can't be changed, but you can change your display name anytime!
