Head over to the Xbox Live Marketplace, find a theme you like, purchase it (some are free), and then apply it through the console settings in the Personalization menu.

You change the Xbox 360 theme by just going to 'My Xbox,' selecting 'System Settings,' then 'Console Settings,' and finally 'Themes.' Pick one and boom, done!
