Pretty simple! Just go to the Arsenal in your ship, click on the Gear tab, and from there you can drag and drop items to your gear slots.

To change things in the Gear menu, hit Escape, go to Equipment, then Gear. Customize your loadout by dragging items into the gear wheel slots.
