You can't directly change your age on Xbox, but you can create a new Microsoft account with the correct birthdate. Bit of a hassle, but it works!

You’ll need to go to your Microsoft account settings online to update your birthdate. Note that if your account is under 18, parental consent might be required.

From experience: You must go to account.microsoft.com, then head to Your Info and edit your birthdate. If you're underage, you might need parental approval.
