Open the Xbox app, go to your profile, and you'll find the option to customize your gamertag. They'll let you choose a new one if it's available. Easy peasy!

From personal experience, just click on your gamer pic in the Xbox app, go to 'Customize,' and then tap 'Change gamertag.' Follow the prompts. Voila!
