Head to Settings > Account > Personal Info > Name. Change it there, but keep in mind the first change is free! After that, Microsoft charges a fee.

From experience, I can tell you: go to Settings, then Account, then sign-in, security & passkey, then Customize profile, and finally Change gamertag. Boom, new name!
