You can't change your name directly on the Xbox console; you have to update it through your Microsoft account settings online. Just go to account.microsoft.com, sign in, and update your info.

As someone who recently did this, you need to log into your Microsoft account through a web browser. Update your name there and it'll sync with your Xbox. Took me about 5 mins!
