To change your PCI in MLB The Show 21, go to the settings menu, then to 'Gameplay', and finally 'Hitting'. There, you can select 'Plate Coverage Indicator' and customize it to your liking!

Just go to the settings menu and look under 'Gameplay' -> 'Hitting'. You'll find the PCI customization options there.

Once you're in the game, hitting Settings > Gameplay > Hitting will get you to the PCI settings. Easy peasy!
