Just create a moat around the summoning altar. The Elder can't cross it, and you can hit him safely with arrows.

Fire arrows + running in circles around stone pillars = easy Elder defeat. Worked for me every time!

Build a tower to snipe him from above! His roots can't reach you and arrows can do the rest. Trust me, I've done it!
